At the same time, Émeline Calvez decided to put away her professional dancer's slippers and become a passionate sommelier. She, too, is attracted by authentic, unadorned wines that are dense and precise.
The choice of organic viticulture was quickly made, as was the use of 'natural' vinification, i.e. no chemical inputs during the wine-making process, particularly under the influence of Olivier Cousin, a winemaker in Anjou.
Sébastien grows 1.5 hectares of Cabernet Franc and 0.30 hectares of Chenin, harvests the grapes by hand, then vinifies and ages his wines in the tufa cellar dug into the Saumur hillside. The wines produced are Amatéus Bobi and Echalier.
